Rosewood Market (across from Publix on Rosewood Drive) is recycling old/unwanted telephone books.  They’re also our favorite store EVER.

If you haven’t gone, then GO,

Raw Milk

Many people don’t really know what else they got when they got milk.  If your milk is homogenized & pasteurized, then it retains little of the natural chemical/nutritional structure that it once had.

Homogenized basically means that the milk fat and water found within milk has been chemically altered so that the cream does not rise to the top.  This also means that the milk, which should be going sour, is able to stay fresh longer…

Pasteurization is the process of heating the milk to a temperature where most bacteria within the milk is killed. Unfortunately, this leads to the deletion of milk’s enzymes.  Pasteurization is not a 100% method for deleting pathogens; poor handling and heat-resistant bacteria are causes for concern even after boiling.

Many times, companies will add back vitamins and nutrients that were disrupted after the homogenization/pasteurization processes.  Vitamin D is an example.

Raw milk has started a comeback in recent years & shows signs of strength. With such strict FDA regulations on farms, present day dairies yielding raw milk are much safer than the raw milk dairy farms of our forefathers.

At Rosewood Market, raw milk is available in 1/2 & gallon amounts.  While the price is going to be more than processed milk, the quality is excellent.  This commodity ranks high on Les Verty Femmes list of BEST LOCAL PRODUCTS in Columbia, and hopefully will make a wonderful addition to your own kitchen!

*Note: Raw Milk is non-homogenized and non-pasteurized; drink and handle with care.  ALSO, water may be added to raw milk to alter the milk-fat content (this would create a 1%, 2%, skim milk state) if the thickness is not appealing to you.
