Sweet-wine Crepes:

For the crepe batter you will need the following…

1 cup flour

1 cup milk

2 eggs

splash of vanilla extract

pinch of salt

1 tbsp of sugar

For the filling you will need the following…

3 peeled pears

For the sauce you will need the following…

3 cups red wine

1 cup sugar

1/2 cup balsamic vinegar (optional)

dash of cinnamon

dash of clove powder

Directions:

1. Peel the pears & place in oven-proof dish. Cover with 3 cups red wine. Place in 350 deg. oven for 10 minutes.

2. Mix ingredients for crepe batter in large bowl, beating with wisk until batter is smooth. Small bubbles will form on top—the bigger the fluffier the crepe.

3. Heat an 8” frying pan (medium-high heat), and melt a tbsp of butter. Swirl melting butter around pan so that the butter coats all areas (if you need more butter, get more, but the idea is to NOT drown the crepe in butter—we just don’t want the batter to stick to the side of the pan). Reduce to medium heat.

4. Pour in 3/4 cup of batter. Cook on side for 40 sec. or until top of batter looks solid.

5. With spatula and clean hand, flip the crepe over to the other side. Cook for additional 30 sec. or until golden brown.  You should be able to move the crepe easily now. Place on dish & finish making additional crepes (you should yield about 6).

6. When the pears are done (which may be in the middle of you making crepes—if so, take a break from crepes and move to this step), take out of oven. Keep the liquid at the bottom, but halve the pears and take out seeds. Pears should be soft.

7. Remove cooked wine and place in a saucepan on medium high heat.

8. Place pears back in oven proof dish and put back in the (now) Turned Off Oven. We only want the pears to stay warm—not neccesarily bake!

9. Heat wine and add 1 cup sugar, clove powder, balsamic vinegar (optional), and cinnamon—stir until sugar is completely dissolved. Once sugar is dissolved, bring to boil.

10. Finish making crepes if not yet done.  When all batter is used and crepes are made—take pears out of oven & mash with fork. Spread pears onto the center of each crepe.

11. Fold crepe in half (twice) to form a pear-stuffed fan shaped crepe. Drizzle hot sweet-wine onto top & serve immediately.

Splash of raw milk, 3 Ice Cubes, 1 Nectarine, Sunflower Seeds, 1 Slice of Tomato, 1 Banana, and Protein Powder.  Mix in blender and enjoy!

3 tbsp. Oikos yogurt (plain); 1 plum; handful of green grapes; handful of small broccoli pieces; vanilla protein powder; sunflower seeds, and 1 banana.
